• 2 large cucumbers, peeled • 1 large tub of Greek yogurt • 5 garlic cloves, crushed • 1 tbsp extra-virgin olive oil • Salt & pepper to season
How to Make
• Grate the cucumbers using a coarse grater into a colander. • Place the colander over a bowl and leave overnight to drain (this is VERY important - all the water must drain from the cucumber). • Add the grated cucumber to a mixing bowl and stir in the yogurt, crushed garlic, olive oil and salt and pepper until all the ingredients are really well blended. • Cover the bowl with cling film and chill for a few hours so that the flavours develop.
